Can I use technique with a SHBM on a 25 lb King Salmon?

Of course! But cooking a whole fish that large at home without it falling apart is a bit challenging.

I used this method to filet the 23" Spotted Sea Trout I caught this weekend. It worked like a charm. I sliced the largest and prettiest filet I have ever been able to get. Thanks for sharing. I hate leaving all of that tasty meat on the bone.
