17 degrees is very thin, some straight razors are sharpen around there, may not stand up to good.
what is the angle on a convex grind? as it curves into the edge it get thinner but it also has some material behind the edge to back it up and you will have a sturdier edge. Or you may thin down the blade on say an angle of 20 or 25 degrees and on the edge sharpen it at 30 degrees on a secondary bevel so the edge will stand up to knots and other tough chopping.
may want to hunt up some inexpensive old swap meet tools and play/practise sharpening.
