Delica or Endura?

with kitchen use i mean making that delicious T-bone steak lol :)

I have managed commercial kitchens on and off for the last 10 years or so. I have some pretty strong "pocket knives have no place in food prep/ cooking" environments feelings. I don't mean cutting up a apple on a hike or cutting your hoagie in half. I have seen pictures of people cutting large pieces of meat up pre cooking, chopping veggies, etc with a knife block in the background full of tools that are better suited for the task.

I generally feel people should do what they want but good luck getting raw chicken juice out of a folder.

Both are nice knives but I vote the delica zdp189, or maybe hold out for the hap40 blade. FFG for sure.
Been using it a lot the last few months with Zero blade play, use it all the time for minor food prep.

Tried an endura, but prefer better control of the shorter delica.

I could/can close the blade on every lockback I ever touched just by gripping it normally one handed(think buck 110 and similar), until I tried a spyderco.
With the lock being moved to the mid position with a valley, it's no longer a problem.
 
I like Endura better,find longer blade more useful.Delica is a fine knife too,but I do not like it that much!Cant go wrong with one of ffg endures in different colors! All around excellent knife and lockup is solid too.Wish there was option of endura with liner or ball bearing lock and s30v!
 
sure there are better tools available for in a kitchen i wouldn't doubt that.
but when i'm on a hunting trip i don't like to take a whole cooking set with me lol
then my folding knife will do just fine to cut the basic ingredients (will leave the heavier work to my trusty Ka-Bar)
but when i'm home it would be ridiculous to use a pocket knife when i have better tools available.
wouldn't want to drill a hole with a hand drill when i have a metabo drill in the garage either
 
I like to cook, not just in my kitchen but often outdoors and in other people's kitchens. I also hunt. I have no problems using a good folder for food prep or for dressing out fish and game. There are better tools out there, sure, and sometimes I have them accessible, sometimes not. My folders get all kinds of animal fluids on them: fish guts, deer blood, rabbit blood etc. I've never had a problem cleaning them after use. A fixed blade cleans up easier, but I'm not always carrying one--I almost always have a folder on me.

i prefer the VG-10 steel over the zdp-189 because it is easier to sharpen.
had a zdp-180 diving knife and it was almost impossible to sharpen without diamond stone

back in my military days i used my ka-bar to cook whole boars when we hunted one down had dried up blood on it for weeks and still it never failed me
same with my old buck 110 primary used as hunting folder for small game remember i hadn't cleaned it in a month and still worked great

Can't argue with that, been using almost nothing but diamond flat stones for the last ~25 years. Got 2 in front of me right now. Got 1 at work, 1 in the tackle box, backpack, truck... even got a credit card size one in my wallet. Sharpening zdp is no problem with diamond, and holds it's edge much-much better than my vg10 delica.
 
Hold them both in your hands. Once you do that, the winner for you should be clear. If not then buy them both!
 
Both are excellent for EDC because both are light and flat. You just have to decide whether the extra length of the Endura is something you need. The Delica disappears in the pocket and the Endura isn't far behind.
 
I trust them ... within reason.

If I were hunting, a folder would be backup to a fixed blade for game processing and camp chores. For a do-it-all hunting folder, I'd go with a Cold Steel Recon 1 with its uber-reliable Tri-Ad lock.

For fishing, I use a Dragonfly Salt and Tasman (Delica) Salt. The Pacific (Endura) Salt is all you need.

For work, depends on the work. Again, for a real hard-use folder, the Recon 1.

In the kitchen, the Endura is a slicing beast! Even so, dedicated kitchen knives like the Spyderco K04 and K05 are even better. ;)


i use a fixed blade for the main hunting chores aswell but for small game or camping chores i'm using a folder
the recon 1 was a choice a few moments till i realised that the scales were the only thing keeping it apart.
i love the spyderco's because they have steel under the scales
that is one of the reasons i'm not buying sog folders
 
Endura is better for kitchen use, by far. I prefer the Delica for EDC, though. If you want G10, also take a look at Byrd knives. I've been carrying the g10 Cara Cara 2 for a while now and it's great.

You must mean "eating" not "making" cuz there's no way a folder is cutting through the vertebrae bone of the primal that T-bones come from.


The Cold Steel (not SOG) Recon 1 is an uber hard-user and much tougher that a Delica or Endura. Their thin FRN scales almost require steel liners. The thick G10 scales of the Recon 1 does not.

i'm not using a folder to cut trough bone i'm using a folder to cut onions and garlic to preparate the T-bone
i know that the recon 1 isn't a SOG i just explained why i didn't like SOG and why i propably won't like the Recon 1

ok thanks for the information.

is the lockback trustable aswell? had an italian lockback knife closing on my hand once during a hunting trip.
only bought liner locks after that.
and with spyderco's razor sharp edges i don't like to happen that again lol

I have both the Delica and the Endura. The back lock is the most reliable lock there is. I do not really trust liner locks (but Spyderco does them better than anybody). If, on the off chance that the lock did fail, both of these knives are designed to protect your fingers so that upon collapse, the flat blade tang hits your finger rather than the sharpened edge.

I really love the Delica and I have very thick, muscular hands. (the jeweler asked my wife if she were marrying King Kong after she saw my ring size). The Delica fits just fine. The Endura is just enough different that the hump/finger choil hits my middle finger and is uncomfortable. It was an easy solution to fix. I just sanded down the hump and finished it off with a fine grit. Simple.

The Delica might be a better skinning blade. The Endura is much better at some types of food prep, but for apples and tomatoes the Delica wins. I carry my Delica without the clip. The Endura is pretty rugged to be so light. It is the better work knife.

If it makes any difference, Hickok45 prefers the Delica. Both are on NutnFancy's Hall of Fame list. Great knives.

I tried the Stretch and the handle was not comfortable for me. I did not like that big hump in the middle. Some people prefer it, though.
