Is there a difference (at all) between VG10 steel in the D3 and D4?
I can get my D3 (the pointy one) WAAAYYY sharper than the D4.
Even maintaining the edge is far easier with the older one.

Is there any difference between the old and new Delica steels?

The D3 is saber ground and the D4 (stainless) is hollow.

I have the delica 4 and tried to sharpen it last night.

What a pain.......its just not taking a good edge, now I dont have the d3 to compare.

I mean its sharp but not as sharp as Id like

You noticed the difference in grinds. The saber grind has a much thicker edge thant the thinner edge of the hollow grind. That's why you can get the D3 sharper.

I really doubt there's any difference in the steel itself. The D4/E4 is a 'beefier' blade, with a thicker primary grind to it. So, if anything, the fact that you might have to remove more steel in order to put a similarly acute bevel on the D4/E4 might account for why it seems tougher to sharpen, compared to the 3rd generation blade.

P.S., I don't have the Delica (in either the 3rd or 4th gen), but I do have Enduras in both generations. I've reprofiled the edge on my Endura4 (sabre grind), with excellent results.
