It would be a lot better if the jigging didn’t go to the edge of the scale. IMHO.

Just out of curiosity, how do you consider it a shortcut if it involves extra steps?Well if it's intential, it's an un-needed and unsightly shortcut.
Ok that makes sense.The shortcut is Pre-jigging the handle material with no reguard to where they will contact the bolsters.

I'm not a cutler, but it would seem to take less time than fitting the bone to the bolster so sanding where there is jigging doesn't mar the bolster.
