DesRosiers Benefit 8" Chef's Knife in AEB-L and Moabi

Available now is one of my 8" chef's knives, made of .098" thick AEB-L, with heat treating done by me, in-house, including cryogenic treatment. This one is right at about RC 62.

AEB-L is a unique steel, in that it has next to no alloying elements to offer increased wear resistance, having just enough chromium to make it stainless steel, and only enough carbon to provide great hardness, making for fantastic edge stability and yet still being easy enough to maintain. Blade features full distal tapering with a machine finish to reduce sticking, and is ground to .004" previous to sharpening.

This knife features a slightly upraised handle, in stabilized curly Moabi, an incredibly hard African hardwood with tight, tight curl, with stainless steel pins. Handle tapers from thinner at the front to thicker at the back, allowing for almost neutral blade balance when gripped forward.

This wood is one of my personal favorites, and my photo doesn't do it justice. The curl is incredibly uniform, and has a wonderful warm tone to it, with tan and gold highlights intermingled with the ruddy peach coloration of the wood.

I have one of these knives - shipped all the way to a remote island on West coast of Scotlan - it is the best knife I have ever used plus it is a work of art!! Hope it goes to a good home.
 
Andrew, that means a lot to me - thanks for chiming in here, especially as I've seen photos of your knife board, and there's a heck of a lot of pro cutlery on it! I'm deeply satisfied that you appreciate that knife, and am glad that it's being put through its paces. :)
 
Wow, how gorgeous is this?? A beautiful kitchen knife has definitely been on my checklist for a while, and I keep coming back to this one, especially because I've heard about the DesRosiers' predicament and hope their shop can be back in order as soon as possible. I'll take it; sending an email shortly.
