I have never seen anyone do a reverse S pass on sharpening media. Wonder why they do that?

Only my opinion. With a advent of youtube people seem to copy the first clip they see. I saw someone doing this ages ago and it seems to have been copied. But that is only my opinion. I never saw it done that way before the proliferation of technology and the internet.

Maybe to prevent recurving the blade accidentally?

I don't doubt that there is a purpose to it. Remember reading a tip from someone years ago who was talking about using a hand plane to flatten the edge of a board. They said to imagine planing the surface as convex (lighter force when planing the middle) to prevent scalloping the wood into a concave surface. The natural tendency is to apply more force towards the center of the board.
