The recessed dots are supposed to be there so the "swarf" from sharpening can collect there instead of filling up in the diamond area. I don't generate enough swarf in a sharpening session to really notice if there's a difference.
Besides the dots, DMT uses monocrystalline diamonds, i.e. the diamond particles are single particles. Some cheaper brands use polycrystalline diamonds which are conglomerates of diamond particles, they tend to fall apart quicker.
I'm currently using a DMT duo-sharp, which is a plate that has a different grit on each side (coarse and fine on mine, others are available). I can testify that DMT stuff works great.
DMT and Norton are among the best on the market, not cheap but then you get what you pay for. If you only want to buy one diamond sharpener for the rest of your life, go with one of those.
