Different type of sharp

I'm noticing an odd phenomenon when I sharpen. Sometimes, when I'm done sharpening, I can get the knife to shave hair, but push-cutting newspaper is no good. Other days, its the exact opposite. What am I doing that is creating this inconsistency?

Btw, I'm sharpening freehand, using the hones from a Lansky Standard kit.
 
Interesting, I'm interested as well.

I picked up a Benchmade 915 recently and gave it a run through on the Sharpmaker, I can shave hair with it but today I went to slice some printer paper and it didn't want to do it but has before.

What I mean by slice paper is I'm holding it on edge and trying to cut pieces off of the paper. The only think that I can think of that I cut since was a blister pack (plastic) today with it. I ran it across step 3 and 4 (white stones) and tried the same thing with no luck.:confused:

I think I might be doing something wrong too because I can't imagine the plastic dulling my knife that quick.

ETA: I just re-read the OP's post and wanted to make it clear that I can "push-cut" paper, I'm just trying to shave pieces off starting at any edge, I was able to do this before.

I've wondered about that myself. Lately, my hair-whittling sharpness skillz have been somewhat lacking, but the damn things are as sharp as ever.

That being said, I wonder if there has ever been an emergency in which a knife was needed where this was an issue ;)
 
Are you doing it with the same part of the blade? When I sharpen, I get the best edge on the belly of the knife, which is generally the area I use to test shave-sharpness. I tend to test paper cutting closer to the choil, which I'm not as good at getting that hair-popping edge on.
