Difficulty HT 1095 May be overstated...

I believe you are right. While not tech fast enough for 1095 in thin sections (edge) it will get you martensite darn near 100%. There would be a transition zone somewhere above edge. With pearlite mixed in.

I've experienced this first hand. The edge turned out great, but peening bolsters, I've managed to crack a blade this way. Doing it the "po boy" way, I really can't say if it was from the initial hardening, or the tempering cycle. I'll second what Marko said; I have at least one that has a huge concrete look to the grain structure.
