I don't agree with the premise that the portion of the edge affected does "no work" as the OP seems to claim. If a kitchen knife is rocked over herbs, garlic, whatever, that part will be in contact with the product and the board.

Also, 20% ugly or 80% beautiful, whatever you want to call it, the whole reason to use pattern welded steel is that it looks nice. So having a yucky looking part welded in will defeat the purpose. Would you give your wife a new car for her birthday where the fourth wheel was only the donut spare and not a full sized rim instead? If so, you're either a braver man than me, or she is awesome and you better hold onto her forever!
 
No, you just don't get it. Damascus is overpriced, ugly, soft and chippy, so what difference does an ugly gray blob of 4130 "hardenable" welding rod on the edge make?;)

The current plan is to use the same steel that the knife is made out of, and it would look nice a shiny like the rest of it after sanding.

But what is it going to look like after etching ?
 
The best solution to having a good job is to ask for a refund. I'm sorry about what happened, but now we all know that Pakistani damask is sold through an English site....
