I like 8x3 because its a common stone size. I don't find trouble sharpening any size knife with them and have sharpened knives from 1in to 12in without issue.
I would pick the fine hone, you will be able to tell better. Remember though, the stone must wear in to a equal level as the hone you have to make a equal comparison.
