Do I need to do anything between normalizing and quenching?

After I heat the blade up to non magnetic and let it cool to air temperature, if it is still straight, can I heat it right back up again and quench it?

Also, is it better to go edge first or point first into the oil?

You can go right to hardening after normalizing.
You can quench edge down or point down but NEVER flat ! Make sure you agitate , edge to spine.

Thank you. How fast should I agitate it?

Just back and forth, edge to spine. The hardining takes place in just a second or so. What you are accomplishing by the blade motion is keeping the blade from being surrounded by a jacket of small insulating bubbles.
