Walnut. Never had one with that material couldn’t resist😁 They arent the most exciting looker but they make up for that in the versatility dept. If it was my only knife for life id feel content.

Yea I almost did walnut when I ordered

See above, both can get you in at your price point

Yea someone previously mentioned David Mary. I need to look into his work more. I did just a quick google on Landi and seems his stuff is nice with very good pricing. He used 01 steel it seems a lot

Check out his sub-forum. There are lots of pictures of finished work, works in progress, and more.

This little Wharncliffe isn't representative of the kind of knife you are seeking here but it is what I have on my belt today. The handle is remarkably comfortable.

My EDC fixed blade is a White River Sendero Classic. Jerry Fisk design, four and a half inches of S35VN, with a handle you can hold on to, it's light, handy, slicey, and has a good leather sheath. I have bigger and heavier blades for serious tasks, but, for general daily knife work(you know, cutting stuff), this one is so perfect that I have two. These folks really do S35VN well, and a lot of handwork goes into their knives. They're not inexpensive tools, until you start using them, and realize what a bargain they are.

I actually have the knife on my watch list

UPDATE : Well I ordered a Carothers already. I watched some vids of his and also read some reviews and things and decided I needed one. He had a few Kepharts in stock so I chose black linen micarta handles and D3V steel. It was a little more then I wanted to spend but ($263 shipped) well that’s the way it goes. I will still be buying at least 1 other brand as well to start with and more along the way I’m sure. I’m still open to suggestions although seems some great ones have already been made
I did too - 3V with natural linen micarta. I'm a sucker for a Kephart pattern. I have a Condor Kephart blade blank, an Esee PR4, and a Becker Kephart BK62 that I like very much. It should arrive on Saturday. I'm pretty stoked.

Sounds like a puukko would fit your needs, anything from a simple (and cheap) Mora to higher end (and more expensive) blades. A middle grade like Roselli's Carpenter Knife, would fit your description. For something larger, you might consider Kabar's US Navy Mark 1 reproduction in 1095 Cro Van steel (same as Carbon V). It's an excellent all-round blade.

Yeah, a puukko has been the finnish peoples go to "do it all" for a long time and for good reasons.

If was to pick a do it all from my own herd it woud be one of these:
