I think I get what you mean Dargonsprayer, I hope you don't mind me summarizing for my own clarity:
a) There's no need to nit pick - there's heaps of great knives out there, plenty of great steels. The differences between steels are minute in the context of a knife. Any of them will likely serve well. Same applies to locking mechanisms.
[*Me personally (Bill Blake) being a sword man I prefer high carbon steels, even for knives, even though they are subject to corrosion, it's just a personal preference.]
b) Just because a knife is cheap doesn't mean it is rubbish. Even cheap knives are almost always fit to task. We rarely hear of blade failiures. Most people are not using knives in a life or death, or combat situation, but rather for everyday tasks, so variances like the quality of the steel are not likely to be a matter of life or death.
[From my point of view a good illustration of Dragonsprayer's point is that humankind got by just fine using Iron and Bronze knives before modern engineering steels were available]
c) I believe he used 'Paki' just as an abbreviation. I don't think he meant it to contain racist overtones - I'm Australian and people regularly call me 'Aussie' - I think he was aiming for the same thing.
