A lot of it is random. The companies I buy from usually send you a catalogue at the beginning of the year with all the new models they are definentily coming out with. Then they may release other knives out of the blue or after giving a little heads up.
Some companies have a set time frame they try to release their stuff in(ie, Condor usually releases their new offerings for the year in June or July), some just release stuff randomly throughout the year.
There's also the giant gap between announcement and release. Most companies announce a bunch of new stuff around SHOT Show in January and Blade Show in June and unveil prototypes. The actual releases of those models kind of trickle out through the year (or sometimes 2 or 3) after those events.
