Do you care about hair?

You guys are thinking of Buffalo Bill, not Hannibal Lecter.

Everyone has a different definition of sharp. For me, if I can't easily do the job then the knife is dull. Whether or not it can shave hair, whittle hair, etc doesn't impact the work that I'm doing so I frankly don't concern myself with it.

I agree completely. However, I think yours might be different than most. I'm not so sure about the part where you imply that folks that want their knives shaving sharp dont use them all that much. Ask HwangJino if he uses his...hell, ask me if I use mine.

Anyway, I tend to agree with magnanimous...being able to shave arm hair isn't really that sharp. It's more of what I'd consider a bare minimum. That's why I use that as a test, because I know if it won't shave hair it's going to struggle accomplishing the tasks I put in front of it. Like you said though depends on what your doing with your knife I guess. And luckily for me, when I need a knife I get to grab one of mine and not one of yours! ;)

Snip...
I think having to have it razor sharp all the time is coming from people who don't use their knives all that much or are borderline OCD. At least as far as knives. Nothing wrong with that. I used to do the same. However, after really starting to use my knives I've found that this is just unnecessary sharpening that will decrease the life of the knife. Unless you hardly ever use it. :D

Meh, that is a big assumption to make on others behalf.
The decrease of life in a knife that is kept sharp is true enough, but you see, not all of us care too much about that.
Personally I hone my knives often, they are tools that are meant to be sharp, and used.
When they wear out, I'll replace them with new ones.
Pretty simple really.
