Do you keep the original edge??

This is a question for the purists. When you sharpen your knife do you try match the original edge or make it your own by reprofilling. I start by trying to find the original edge with the shaprie method and I work from there. I have some expensive knives that I try to keep the original edge on and just "touch it up". Most "normal knives" I just sharpen at 17.5 DPS starting with a 150 grit CBN on a fixed system to make it easier for me, and progress through the grits from there/
 
No, I don't. I hate shoulders, even guided systems leave prominent shoulders. I blend them free hand into a convex, this allows me to maintain via strop for long periods of time.

On my pricier knives, I do a more subtle blending instead of going full hog.
 
It depends. If it's ground at a good angle, I'll keep it, though I might have to clean it up. Most times I have to reprofile to get the most out of a knife's edge though.
 
Being that I cut my teeth on convex edges when I started to get into "serious" knives like khukuris 20+ years ago, I general treat all of my knives the same way.

If they come from the factory with a good edge, I leave it. Once I bugger it or it becomes dull, then it's back to free hand stone and strop.

About the only knives I keep close to there factory edge are scandi grinds, but I still often strop them instead of keeping a pure scandi grind.,
 
I put my own edge on each knife.

Among other things, I find that a lot of knives don't have the same edge angle on both sides of the blade. One side will be at about 14 DPS, the other side at about 21 DPS.

Ive read many posts and im learning the focus behind the various grinds has become very scientific and technical, and this when I come off as a scruffy old goat, because I dont really care about all of that.
if the knife is sharp and cuts then thats where my concern draws the line.
I remember I resharpened a fallkniven knife and it went from convex to sabre grind, I notice the grind changed, but also noticed it still cut what I needed to cut.

I concur with both of these with a slight deviation: I'll usually use the knife with its original edge until it no longer cuts as-needed before I start re-profiling and sharpening. I find that helps me better understand where I need to remove material.
 
I have only reprofiled a couple, and the rest I keep to OEM edge. Most are display here anyway and don’t get carried or used.

Pretty much every pocket knife comes with an edge that is too thick for me, so I reprofile everything. If it comes with a very sharp factory edge (Spyderco does a good job with this) I'll often use it until it actually needs sharpening before reprofiling, but eventually it's gonna get changed.

An example of going thinner than factory... I don't always go this thin these days, but this one is sure fun.
