This just struck me.

When a polished edge has a much smoother surface, wouldnt it have less tendency to chip than an egde with a coarser surface, where all the tiny scratches could be starting points for minute cracks??

Or is this just theoritical?

Just wondering...

Claus, yes for exactly the reason you describe. What is generally more important for me though is resistant to direct impact and a polished edge is stronger in this area than a coarse one. Do some chopping with both and see which one degrades faster to a much greater extent.

Thanks for the answer, i didnt know that it held up better in chopping aswell.

I seems that i´m getting smarter day by day.

Thanks.
