I already have the composition lists of elements each steel contains, along with general descriptions. Where can I find a list of Rockwell hardness VS. Yield strength of the most common steels used in knife making?

Most books on materials will have this usually for a common steel like 1095. To get more specific references try some newsgroups like sci.engr.metallurgy .

Note that varying heat treats can give steels with different strengths and toughness characteristics at the same RC.
