Does anyone ever regrind convex blade into V grind?

Hey guys. Already posted in maint,tink,embell, but figured i would ask you guys, as you more than anyone about these things. I know a lot of guys swear by making a knife convex, but what about the opposite? Could i turn a blade with a convex edge back into a factory V style grind? The knife was originally not convex, but the previous owner convexed it, but i want to turn it back for my own personal knife. Any and all advice or ideas more than appreciated. thanks
 
Just cut the convexed part of the edge flat. There should be very minimal, if any, blade loss.
 
Unless it's a thick appleseed convex edge (unlikely), I don't really see the point in doing any "conversion" back at all -- I often convex the edges of my flat ground knives to get rid of the V shoulder and some of the fat behind that so that the edge cuts much better thru most materials, but I usually sharpen them on stones. Very easy - easier really than the typical factory V, since with the convexed edge, there's much less metal that's actually being ground on to do the sharpening.
