Dollar Store Knives/Kitchenware Good for 1st Time Maker?

It's tough to come by some scrap, flat, metal for pocket clips
and other projects I have in mind. So I was roaming the dollar
store the other day and they have a lot of cheap kitchen knives,
spatulas, and the like that I thought might make for good material
just to learn on and not feel bad about breaking/ruining.

Would this stuff work or will it just snap when bent/grinded?
