On the convex grind there, that is a full height convex grind with a micro bevel. I don't do zero ground convex knives. That 'full convex' term can be confusing, and I want everyone to know what they're seeing. I grind my bevels very close to flat, and also very thin before putting on the bevel.
 
The full convex is perfect! Thanks for the tip too. Wrapping sandpaper around my strop worked much better. I got the edge back in no time. After FDing and butchering two deer, she needed some love. O1 is, hands down, my favorite steel. I'll never go back!

Looking good. I pan seared up some venison tenderloin on Christmas Eve. Lightly blackened and medium rare all the way through. I just happened to take a picture on my phone so I could send it to my bro and make him jealous.

My buddy used an old fillet knife to debone some of our deer and having the flexible, thin blade was really handy. Andy, if you ever consider adding a fillet/boning knife to your line, give me a call.

+1, would jump all over a FBF flilet knife, but if you are looking or wanting a boning knife the Gentlemans Steak knife is or could be considered a boning knife. If you want some pics of the flex shoot me a PM or email and I will try to get you some. Its an amazing knife. Stays in my kitchen drawer and gets used probably just about everyday, only thing I would change is that it be carbon steel like O-1 not a stainless.

God I miss hunting up there, I had a lease in Calhoun county for about 4 years, then I started having kids and had to give it up. Could not justify spending that amount of money to hunt when I had kids to raise. But when the raising is over I will be back up there!! Those inners are huge!! Those came off of that doe?

Sure did come off that doe! She was a nice size, not a huge one, but a mature adult. I couldnt wait to get em on the grill when I got back. Even the wife couldn't believe how tender that cut is!
 
My mouth just started watering after looknig at those tenderloins!! I don't have any that I can cook up, but I do have the next best thing........backstraps! :D I believe I'll thaw some out and cook them up tomorrow.

Man how do you stilll have backstrap in the freezer? Backstraps last about 2 maybe 3 days around my house. My 5 year old boy will go and get em and lay em out. LOL, its funny b/c b4 we had him my wife did not or would not eat deer meat. Then she tried my straps that I put on the charcoal and next thing I know I dont have the straps for myself like I used to. Only bad part about it.
 
You bring up a very good point. I have no idea why I still have any in my freezer. I'll have to get on that. :p They are only about a month old and the gf won't touch em, so I have to make them when she isn't around, which isn't very often.
