Double edged for utility?

There are several potential advantages. You have two edges and they can stay sharp twice as long, they can have different edges and sharpness ( like serrated or chisel grind or combo as in some kayak or diving knives) and you can cut both ways when clearing bush etc. I'm a fan and user of double edges, but it's a good idea for the top edge to start well back so you can get leverage or push the top edge down without using a block or something similar to protect your hand. They are legal in Canada but may be illegal or classified as daggers (!) in some jurisdictions.

My Tekna (pictured above) is from the early to mid 80's and I believe it was marketed as a dive knife back then.

what utility purpose would a double edged blade serve? not much in my opinion. actually, i think i would prefer not to have a double edged blade for utility purposes.

i will amend my original statement. when i read utility, i automatically thought EDC or every day use. there are some some advantages for a double edge knife, more so if one edge is straight and the other is serrated, but those advantages become apparent while using the knife for specific jobs.

Exactly--double edged knives are specialized tools and therefore are specialized in their application as well.
