Doubting my temp probe?

At what temperature does ATS-34 start to show some color? Specifically a very faint dull red, when looked at in complete darkeness.
Is this the same for stainless vs. tool steels, or do they turn colors at different rates?
I suspect my digital controller is not accurate, and don't have a 2nd probe or thermocouple to verify with.

You tried finding out the temperature of boiling water at your elevation and then checking your thermocouple against that known?
 
Thank you Will, that is an option I have not considered.
I think I found the answer through internet searches, the steel should just begin turning color over 1000F, which I can plot a chart from the boiling point test you mentioned. And go from there. I'll go one further, start at room temp, and see if the plot on a graph is linear.
