Douk-Douk, Opinel, Svord Peasant, Higonokami..what else?

Mam is very good,thin blade and pretty good heat treat...and easier to carry than opinel!Perfect for edc....blades are like straight razors 420 but very good ht,holds edge better than victorinox and opinel.
 
The Otter-Messer Black Cat K55K knife comes to mind. They are really more of a city knife, but they are economical, well made and really thin! I had one but gave it away when a non-knifey friend expressed interest in it.
 
Marttiini, Finnish knifemaker has a number of rubber or wood handled knives that in some respects resemble Moras, yet are very, very different.

Antonini Old Bear knives resemble Opinel, but the lock ring rides inside the bolster. Antonini has a number of other interesting models that I have yet to try.

Joker, a Spanish mfr. with a wide range of knives including some slipjoints and some very inexpensive Opinel-ish lock ring knives with flat-sided handles that carry more easily than un-modified Opinels.

Ontario Old Hickory and Dexter-Russell Green River knives. The Old Hickory butcher knives are popular subjects for modification, or work well in the field just as they are. The Green River 4215 5” fish knife is a particular favorite of mine.

It is really too bad that the dirt-cheap South African Okapis seem to have gone out of production. Not just the thuggish ratchet knives, but a range of external-backspring slip joints are knives that you should grab up when you can find them. The Biltong, a snappy small sheepsfoot blade has been part of my daily carry for several years.
