Im thinking of a dream knife(for me) of less than 3/16 thick, 6-7 inches long and something similar in profile to a Esee 6, Survive 6 type of blade. A cross between a drop point and a spear point. The knife would be used outdoors backpacking and in the kitchen as well. I am sure it would also be used at the skinning rack also. What do you all like for a steel for such a knife? 3V 154CM 1095 or something else?

Good call but I think you might have a hard time finding a maker that's overly familiar with that steel. H**l I don't even know anyone that uses a lot of pd#1

I've done 5 knives with the stuff. I hate it... But I'll do it.

You mean Z-FiNit not pd#1 I'm taking it eh? I seen that video on YouTube where it sounds like you just got done a 2 week bender working with that stuff. You sir are a champion.

My dream knife in that size would be an esee 6 with larger handles as I have xl size hands, steel in cpm m4 with a convexed sabre grind instead, and a nice leather sheath.

You named one that could fit the bill that's already out there. The Survive 6. Into the "already there" group, though a little short, would be Nathan Carothers "field knife" (Nathan the machinist). He has a heat treat to 3v that makes an already amazing steel nearly perfect for a do-it-all knife. Hard to say if he will make a 6"-7" version but you'd be hard pressed to find a better knife than his field knife. Read more about 3v in bladeforums and the newest heat treat. I think you will be pleased. Also, as I understand it, Survive is using his heat treat now so you may want to look at their page to see what they have coming.

Have a custom knife made of SpectrumWear that I'm very happy with. Edge retention is crazy and seems pretty tough.

Busse's SR-101 (52100 -ish) does it for me. Hits a sweet spot of price/toughness/edge holding/ease of sharpening that works great for what I do (in larger knives as well). I'd take INFI as well but I've bought mostly SR-101 because I can buy moar knifes at that price point.

3V, PD1, or cru wear. Some nitrogen stainless would be very interesting. Have not tried it, so can't say for sure, but I bet it would be awesome.

I hear ya capt, in fact I have the gso 6, the original and while it is nearly perfect I find it to be a little heavier in thickness than my needs and the original has a shorter handle than what is right for my hand but I love the knife and the steel. I have much less knowledge of the steels that are used than most of you guys but am a long time enthusiast and user so with my nephew offering to partner with me on a custom knife, I thought I would get more experienced opinions. Thanks and keep em coming Did I mention the gso 6 is nearly perfect for me

I just profiled a 12" overall knife from .220" Spectrumwear with a Portaband on a stand. No fun.
