Dremel for polishing blades?

Whelp? Assuming I keep the blade cool with intermittent baths, I think it'd work.

Your going to have a hard time getting an even finish. You will end up with kind of a wavy finish. Not that the steel will be wavy, but you will have high polished areas and foggy areas. There is a reason we use really big thick buffing wheels.

If you are intent on doing this, I suggest that you practice on a el cheepo knife first.
