Dried Sausage

I have about 10# of venison/pork sausage that I am thinking of drying into jerky for hiking food. Any ideas on how long this stuff will last in the field? A day or two...or a week? Just want to know how long I can expect it to sit in my pack and be edible on the trail....
 
Depends on how much drying time you give it, but I would think at least a week. Do you have enough time to try it with a small batch and see before you need it? (I mean, before you commit to the whole ten pounds?)

Actually, the stuff stays in my freezer and I was just thinking of drying some more of it out. I may or may not do the whole ten, as that is quite a bit. I have dried it before, but it barely makes it out of the processor before I demolish it, so I have never been able to test it out.
 
I done the dry sausage before and it lasted me long enough that non ever spoiled.. I would say atlist 2-3 weeks. It has to do with the amount of fat and how it was prepared.. Some are better then others..

Sounds pretty good. FWIW, I've kept landjaeger for ten days and a even a small well-smoked ham for seven. If you wrap it in multiple layers of paper it keeps longer than if it's wrapped in plastic.
A 12" long piece of 4" pvc with a cap glued on one end and a threaded cap on the other makes a great food safe when it's hung in a tree. It straps to the outside of the pack and weighs almost nothing. Drybags seem to work pretty well for that too.
 
I take dried ladjaeger, very dry pepperoni sticks, and hot spicy salamis, i cut the salamis into THICK slices, dust them with a bit of powdered salt and let them air dry on the oven rack, door open. I take tins of spicy green olives, hard cheeses, and biscuits. Good eating1
 
Bushman5 you are the DA MAN you know how to eat... I carry dry sausage with hard cheese and a tomato for lunch on very long hikes. Green olives and feta cheese...
