Drying plum wood

One thing I'd like to add as a piece of advice (all of which has been good), is to make sure that there's plenty of airflow around *each flitch* - I usually get a bundle of bamboo chopsticks, and stick two of 'em between each flitch or slab (or however many need to be between 'em to give them good support - usually 1 every foot or so).
 
Another method used to dry green wood is denatured alcohol, I also do woodturning mostly bowls and have had good results with DA. It is a bit art and science, do an internet search and try some experiments I believe you will be surprised at the results. DA helps speed the evaporation process without damaging the wood. The advice above is great, especially about fruit wood it has a tendency to warp and split faster than most species.
