Easiest To Sharpen Knife You Own?

For me it's my SAKs hands down. I don't think I've ever had trouble sharpening them....sandpaper, stones, pebbles, rods, cement...could write a long list of things I've used on em. I think with how tiny the blades are, that helps me to get em sharp quite a bit. With higher end steels like S30V my sharpening skills are laughable at best. :)

What's yours?
 
Yeah, definitely a SAK. I can put a razor edge on one of those in the same time I get done with the first step of a blade steel like S30V etc.
 
I have a kitchen knife that's slightly easier. It's the same steel (quite possibly from the same factory) and about the same hardness. I think I just use faster strokes on it for some reason
 
Spyderco Delica and any SAK. They just seem to get razor sharp in seconds without paying too much attention to angle, pressure, etc. "Stress-less" sharpening! :D (some of my customs OTHO....:grumpy: )
 
My dad gave me a Kershaw 2415 liner lock with a full shallow hollow ground AUS6A blade. It is much easier to sharpen than a SAK.
 
It's probably Opinels for me. Extremely thin blades and 1075 (I think?) steel.

Its a cheap little knife that doesn't really hold an edge but takes one in no time.
 
I'd say that my Benchmade 805 TSEK (plain-edge, 440C steel) is the easiest knife to sharpen that I own. A couple passes on my fine & extra fine Spyderco "bench stones", and it's razor-sharp again.

Opinels from what I've seen of them (Own none myself) seem like they'd excel here as well. A kitchen knife with SAK-like steel properties would be easy to sharpen indeed, just a few good strokes on a quality rod and you'd be good to go. I almost want to stop buying super steels, SAKs and stuff are so much more enjoyable to sharpen for me. I guess once I get more knowledgable about what I'm doing with S30V, S60V, D2 etc I'll enjoy myself more.
 
Carbon steel, like the machete I recently purchased, is a breeze. Well, except that a 22" blade takes longer, due to size. I have a 420hc Buck Alpha that sharpens right up with a couple freehand passes on a diamond stone. Makes me feel like a pro. S30v....fuhgeddaboutit.
 
For me, M2 seems to take the edge I want with ease.

I'm suspecting it has more to do with how much the edge deformed in use in comparison to other knives I own, though.
 
SAKs for sure. they are so easy to sharpen. even I can make them super sharp, and I suck at sharpening knives. I havent owned a s30v blade yet, but from what I hear on BF, I imagine I would have trouble with it
 
Buck's 420 is another steel that's a pleasure to sharpen. Mmm, I need to pick up a new Buck sometime soon.
 
I second Buck 420HC. Not that it keeps the edge for very long, but my Strider/Buck 889 is my easiest knife to sharpen, believe it or not. I think the edge profile has a lot to do with that too.
 
any spyderco using the sharpmaker. the initial factory edges are already so well ground and bevelled.
 
My Alvin Johnston 'worn-out' paring knife in fully-hardened 1095 is the easiest sharpening knife I own. Lay flat on stone and hone.
 
my victorinoxes are like butter. one chipped so bad unfortunatelty, had to spend several hours to restore it, i was real pissed. but in the end it turned out good, the vic is now a tanto thanks to diamonds, i love diamonds.

the hardest steel to sharpen ive encountered is s30v. but with diamonds no problem :thumbup:
