Easy Open Traditional Knife options for an 'Older' Gentlemen.

Case Copperlock. Comes in two sizes mini and full. My full size is very easy to open and is so thin it disappears in my pocket.

I think this is a good idea. I've got a very bad right thumb, and have had to sell most all of my slipjoints.
All lockbacks will be easy to open, but its hard to work to lock on a GEC if you have hand problems.
I have a few Case Copperlocks, and have no problem closing them at all.

I just sold a single blade GEC Northfield #85 Easy Open (an SFO) because I couldn't open it without pain.
I also got a GEC #72 lockback this week, and couldn't work the lock without pain. Had to send it back. It had problems, and I would have sent it back even if it did have a smooth lock.
If he has any weakness or pain in his hands I would stay away from GEC all together.

I haven't handled one personally, but since I thought the Case XX TRAPPERLOCK would be worth mentioning. It is a Trapper style knife, but with a thumb stud for one handed opening (probably makes for a easy two handed opening knife) and a pocket clip.

Before making any choice for the gentleman in question, there's some things we have to know. Is he a knife guy already? What does he do in his day to day life? If he already carries a knife, what kind does he carry, and does that pattern seem to be what he likes?

One mistake lots of people make is, they buy somebody what they themselves like. This may be a far cry from what the giftee may actually like. I've been given knives because some said "he likes knives" and I've had to keep a strait face and say 'thank you, just what I've always wanted" while thinking 'what the heck am I going to do with a tanto bladed ninja knife.

Make sure the gift knife fits the man.

Carl.

Whats the purpose of this blade shape?

This 85 would be a great choice.

I'm a grandfather and I have a Case Mini Copperlock and full size Copperlock.
Both are easy to open and close and fit and finish is excellent.
The mini is an Amber bone jigged model and the regular size one is Hunter Green with copper shield.
They were both gifts and I'm I'm very happy with them.
I have no experience with the suggested GEC models.

My case copperlock is probably my easiest opening! It's the smaller size and absolutely disappears in my pocket!
