I like Frailer's idea, and Will Power's, too. But there is a spearpoint Opinel, the No. 8 Garden Knife. And a wood handle would be even easier to file into an easy opener. Hmmm... and it already has a lanyard hole drilled. And there's the technique Coup du savoyard, where you hold the knife by the pivot end, and rap the handle end on something hard, and the blade partially pivots out, since there's no spring to hold it in. Kind of a hidden easy opener technique. Maybe no mod necessary.
