any fixed blade can be used in the kitchen but if you wont a knife that will work well in the kitchen then a 1-2mm spine is what you wont and a convex works best i also use my knives as kitchen knives i find a kephart design works best for my kitchen needs, i use the bark river mini kephart but i might go for there longer version
