Edited, as I missed out the requested criteria. Spyderco Resilience with it's FFG is much more than 3 inch.

Is there anything else out there? As an EDC, I want a blade length not much over 3". A pocket clip is a plus, but also want comfortable deep pocket carry without using the clip.

I think the Al Mar Ultralights (non-talon) have good kitchen utility geometry. Might be worth a look. The Falcon has a 3.15" blade but I'd opt for the 4" Eagle (which I own and thoroughly enjoy.)

I have an Al Mar Eagle Classic Cocobolo which I've successfully used in a kitchen (away from home), but would have traded it instantly for almost any kitchen knife. shrug
 
If you're not hell bent on a folder, there is this very classy pocket carry fixed blade by AG Russell : the Woodswalker. It's exactly the size of a paring knive and is just perfectly designed (and affordable as heck), very easy to carry with the hip pocket sheath. You might discover pocket carrying a little fixed blade is a true blast...
 
Spyderco Spydechef would work. It was built with food prep in mind as a main usage.

I second the Böker Plus SanYougo but the really efficient one is his bigger brother the ChefYougo. Can be carried in the pocket or around the neck, however I don't see myself carrying one of these as an EDC. On the other hand, the AG Russell Woodswalker or the BarkRiver ProScalpel are perfect little fixed blades for EDC (as are many Bird & Trout patterns by different makers).
 
Thanks folks! Some great suggestions here. That Lionsteel Bastinelli (which I'd never seen before) probably best fits the bill in terms of a straight section of blade that can get down to the cutting board without interference from choil/handle, the right size for a folding pocket EDC. I'd have to warm up to the lookk, especially the extreme jimping on the spine near the pivot, but it's the right idea.

I also love all those diminutive fixed blades. Some very cool stuff there, at least one of which I'll probably pick up.
 
You're welcome ! And don't hesitate to drift over to the fixed blade EDC thread, there are some absolute beauties there (many from Big Chris, Spyderco Sprig (oh, I love this one...), and I will stop here, because I'm hurting myself !)
