Edc for food prep

Para2 or Spyderco Pacific Salt. The Salt is my favorite food prep pocket knife, no worries about rusting in the joints from anything getting in there (yes, I still clean it, but I get OCD worrying about something I missed rusting up the workings of my knives) and the decent sized blade and hollow grind slice things up pretty well.
 
SAK alox farmer if im out on a day hike or camping and throwing some lunch together or I have a cold steel finn bear in my bag if i have anything bigger that i need to cut. I carry other knives with carbon steel blades for utility and bushcrafty type things but i like to have SS for food so my food isnt so metallic tasting.

The kitchen has some very speciffic and good knives designed for the task you're trying to accomplish. It is occasionally fun to use a folder for food prep though. Personally, my opinel is one of the more fun knives to use for light kitchen tasks, or camping food prep. I don't have to worry about it corroding and the blade geometry makes it a terriffic slicer through everything from an apple to a block of cheese. The steel is fairly soft, but bounces back to life nicely with a few passes on the rod. It's a classy knife to have on a picnic with the girl too.

...I'm not gonna lie though, I'm occasionally guilty of using an absurd knife for a simple task just because it makes me giggle like a school girl.

I have really liked my Sebenza insingo for food prep but I think the winner here is the military. The size and shape is perfect for food prep.
 
The one I used most recently was a Yojimbo 2. I was at a friends house this weekend helping prepare food for a party, and they gave me a serrated knife that was SO DULL that I couldn't cut the french bread that I was tasked with, so I used the Yo2. A little short, but worked great. I like the Yo's finger clearance for chopping small items like green onions or slicing cucumbers and the like. ...but I prefer real kitchen knives.
