Both of these knives have already lost 2-3 mm of blade width.Ok, have to ask, being ten years old what are you using on those edges, guided system or stones. Wish I could my blades this nice after so many opportunities of use![]()
For sharpening, I use diamond bowls and a precision-angle manipulator.
To correct the cutting edge I use a polished beech board. I rub it with white Dialux before work.
