I was wondering how thin everyone usually grinds their hunting knives (flat ground) to. I'm presently using AEB-L at 62Rc, but will probably be adding S35VN (61Rc) to the mix in the near future.

I'm going to say as thin as you can without it deforming while using it for its intended purpose. You can always bring it back a little.

Depends on what kind of hunting and what kind of service you are pressing it into. Generally saying 'hunting knife' has a fairly broad interpretation IMO.

If you are using it simply to field dress and skin out deer or smaller game, you can go quite thin. If you are gonna quarter something larger, or try to take a wild boar with blade alone, you might want something thicker...

Like Shaw said, as thin as you can go without deformation. Thin wins...

Cheers.

Is this all measured right on the line separating the primary and secondary bevels? Or is it measured as close as possible to the cutting edge?

I grind mine to around .010'' and then put an edge on it. I guess "thickness behind the edge" would be a little higher than .010" but they cut well and hold up so it works for me.
