I don't know what the edge profile is, however you can check it easily with a ruler. Just lay the edge of the ruler along the edge of the knife and see if the knife bevel tracks along the entire length. If it is convex it will dip down as the bevel approaches the very edge.
Regarding "touchups" on a convex edge, they are best performed on a strop, however you can use a steel or rod of some kind. All that this will do is put a slight secondary edge bevel along the edge. This will be removed the next time you hit the edge with a strop.
