Using diamond stones is a bit overkill in my opinion, they remove a lot of metal with minimal effort and that is not the best way to do simple sharpening or touch ups.

No worries. I trieda diamond hone a couple times for some kitchen knives and they worked fast. My familiarity was with a basic Arkansas stone.I agree with you that the regular EdgePro stones work just fine for "simple sharpening or touch ups". My use of the diamond stones was, and is, for reprofiling the edge only. I apologize if I failed to make that clear in my post (#4). The regular stones will certainly do that also, I just personally prefer the diamonds for their speed and efficiency. Only a matter of personal preference. Was only trying to help the OP.
