I apologize for bringing up a thread that's 6 months old. I would not take any more advice from the local sharpener. Every edge, when properly profiled, should cut paper regardless of what grit you used. A DMT XXC or Atoma 140 ( when broken in ) should be able to shave arm hair after finishing with them. If they don't, you either still have a burr or you have not reached the apex of the edge.
