I want to know how thin i can grind my knife edge on a flat grind before heat treat. I hear people are doing the thickness of a dime but that seems too thick. I have also heard .020" works but that seems to thin. any input will be much appreciated.

I usually go to .030-.040 depending on the design of the knife. Also, this topic has been covered many, many times and is accessible via the search function. FYI

The basic rule is:
Carbon steel, .030-.040" thick edge
Stainless .020-.030" thick edge

With experience, you can shave those by five to ten thousandths, but when you get thin, warp and bacon edge increase.

If the steel is thin, like .065" ( 1/16"), it is often better to grind the bevels after HT and avoid completely.
