Edge thickness before sharpening?

Hello!
Just to introduce myself; my name is Filip, I live in Croatia. Knife making is my hobby, I made around 20 knives untill now. Mostly hunting/bushcraft drop point knives.

My question is: What do you consider ideal edge thickness before making secundary bevel (final, sharp edge)?

I mostly use n690 stainless steel, 4mm thick (0.16"), flat grind.
 
Lately I've been going full flat to around 0.01" (0.25mm) then convex to near zero on hunters in that type of steel. N690, 3V, S35VN and 52100 are what I have been making hunters with.
I don't make a lot of Bushcraft knives but I would go a little thicker, 0.02" (0.5mm) before convex

I like full flat with convex edge idea for hunters.

Robert, you make whole bevel slightly convex or just the edge?
 
Just the lower approx 1/2" (10mm). I have a rotary platen for my grinder that I use but doing it on a slack belt would work too.
