I have used many systems in the past: Gatco, Razor Edge Systems, waterstones (Stone Pond from Lee Valley Tools), Edge Pro Apex system, belt sander, DMT bench stones and a Sharpmaker.

ALL of these systems work.

That really is what it boils down to. We all have different needs for different knives, and differing levels of what we call 'good edges.'

Find the one that is right for you.

LOL! Unfortunately, the only way to do that is to first get Gatco, Razor Edge Systems, waterstones (Stone Pond from Lee Valley Tools), Edge Pro Apex system, belt sander, DMT bench stones and a Sharpmaker. (I think we left out a dozen or so... :o ) and then try them out on our kitchen knives, pocket knives, hunting knives, hobby knives, and embalming tools... THEN we can decide which five we want to keep and use regularly... :D

THAT'S what makes this such an enjoyable hobby!
