I purchased my edgepro 20 + year ago a instructional video came with the product. Is this not the case anymore? If you are looking for practice as your friends if they would like the kitchen knife sharped they will come out of the wood work.
The most important thing to work on is setting the top sliding plate with the knife at the hilt against the edge of the black table and the edge to be sharpened should be right on the edge of the table at the front as you are sharpening the knife you are pull the knife back and maintaining the angle by keeping it on the edge of the table.
To stop the knife from being scratched I use packing tape on the blade.
Let me know if I can clear up any other problems you are having.
