Elmax Chip

Chester's is the only one close by that has a worthwhile selection, a couple of other shops in Smithtown and Middle Island stopped carrying knives recently. Let me know if you wanna work on that chip, we can polish the edge too if you want, takes 2 minutes.
 
YO I'm up in westchester but no stranger to the island. I'm in for the order of kai sharpening session at gooeytek's house.
 
From what I have read, most times what people think are chips are actually just a rolled edge, no metal was "chipped" away. Elmax is supposed to be very tough for a stainless, so odds are it deformed and did not break. Rolls are easier to sharpen out typically as well. I have rolled a few edges and maybe chipped one (ZDP-189 before I knew that most chips were actually rolled edges, but ZDP-189 is very hard). Also, some people believe that newer knives are more prone to chip and roll before they get used and re-sharpened. Haven't really found a good metallurgic explanation to it, but the majority of my issues have come from new factory edged knives. You should be able to fix it right up, plus have your own edge on it to boot.
 
Alcohol + sharp knives + wheels on a bench grinder spinning at 3000 RPM... What could possibly go wrong. :eek: Stay safe...
