I call this the Essential Must Carry ie a knife that you carry regardless. Not EDC's you may rotate but a knife you carry every day whether at work or at home. Is there one knife you won't be without?
For me it use to be a Schrade Senior Stockman on the farm but now it is a Smith & Wesson Cuttin' Horse Modified Tanto Folder with a 2.5" blade. I know it's only a "cheapie" and I often carry far more expensive knives in addition. But this is the knife I carry everyday for all sorts of cutting, slicing and scraping jobs - it gets a lot of use and is often abused. Because it is cheap and replaceable it is often called upon to do things I wouldn't dream of doing with a more expensive blade.
My EMC clips on to my belt, pocket or is carried in the pocket. I keep it razor sharp and it works for me. Another advantage is that it makes a good "lender' to those who are not knife initiated. So my interpretation of an EMC is just that - it is essential, I must carry it and would not be without it - who else has an EMC?
