Emerson chisel grind question

If I wanna cut something thin I'll pull out the rapala fillet knife. I don't really have the need to slice paper thin Charcuterie at work, on the streets or even at home.
 
Sushi knives are chisel ground.
 
True that.

Pretty sure I could plane off some pretty well paper thin cheese and meat with the chisel edge.

It's just an edge.
 
For cutting thin slices, a chisel grind with the grind facing the thin slice is ideal, better than a symmetrical grind.
 
I only see disadvantages. Why even make the chisel, just easier and cheaper to produce?
 
If you really are worried about the chisel grind. Why not get the CQC-7V?

For all intents and purposes it's got all the ergos, and same blade as a regular CQC-7B, but just has a V grind (and tan handles)

Talk about a complicated grind, some yanagi have the flat side actually slightly concave, and most are forged!

I've been interested in the A100 for a long time but the chisel grind has kept me away. If I got one and ended up not liking the chisel grind would it be possible to have it reground into a V grind? If so, any recommendations on somebody able to do the regrind?
 
A proper chisel grind should work well for most any task.

Emerson chisel grinds are a bit shallow and the edge could be thinner IMO.
 
I build chisel ground knives exclusively. I have had no complaints. Be warned that Emerson grinds his on the wrong side of you're right handed.

I think that's right (correct :D .) The first time I ever used a serrated blade with bevel to the left, I could tell the difference because I didn't have to fight against the tendency for it to curve away from me, as what usually happens with knives beveled on the other side. It's a matter of muscle dynamics, I believe. I once sent an email to Sol Glesser on the subject after wrestling with a fully serrated Delica cutting cardboard and other stuff, and he responded that his knives are often in the hands of first responders who have to make cuts in a hurry, and if the blade drifts, it is safer if it cuts away from the user. That makes sense to me, but as a righty, I find that blades beveled on the right are more controllable. However, I'm not an EMT.

There may possibly be another consideration in the industry. A blade beveled on the left looks better when photographed.
 
The chisel grind on Emersons aren't on the wrong side if you're peeling an apple though! I really wish these Emerson knives came tapped for left hand carry. Damn I can't believe in this day and age they don't do that. Especially for a knife that's supposed to be for military and police use.

Such great knives. Emerson's chisel edge is something you just have to experience. Some people just love it and some hate hate it. You'll have to decide that for yourself.
 
Some of my work is around diesel engines. My knife use varies from opening packages, cutting fabric, scraping off stickers, etc. The only time I've ever noticed the chisel grind not cutting straight is on radiator hose. And it is nothing that can not be overcome with a little extra attention. It actually parts the radiator hose easier then a V ground knife. It is a strange thing. You can test a chisel grind by cutting paper, and it doesn't seem that sharp. But it will go through radiator hose like butter. I don't know that it is easier to sharpen, but it is faster to sharpen. And for a work knife I think that is important.

They do. It costs 25 bucks, but Emerson will drill & tap for lefty carry.
