With some practice anyone can freehand sharpen too. I love sharpening with Japanese whetstones, the smooth slurry of fine 'mud' and metal with each stroke is just so therapeutic. LOL!
I agree with the meditative state you get from freehand-sharpening on waterstones. I use the paper wheels to polish and strop the edge fast after a reprofile, and when the mood strikes, most touching up is done on a compound-loaded leather square after 1000/6000 stones.
X3..... There is something very relaxing about sharpening. Especially when you are past the fear of destroying a expensive knife and take your time and enjoy the process. I can loose hours doing it. I detest sharpening when I am in a hurry. It ruins the experience for me. I suspect there is a extra amount of OCD in us that enjoy sharpening beyond the utilitarian edge.
