Because a SwissChamp is so awesome that everyone wants to borrow (i.e. steal) it. But who wants to own something that's easily identifiable as a stolen item? Think of it as an insurance policy.
Talk to a local trophy shop or possibly jeweler that does engraving. Depending on the exacty equipment they have, they should be able to do a very nice looking job for not too much money.

-that means that only if yours is missing and someone else is silly enough to carry it back to work or around you-and open it to show the blade- will you be able to id it as your ex-seems to be an unlikely situation
